Here at Panda’s Corner, D telecommutes from home on Wednesday’s, this means we have to share space with him while constantly reminding M that Daddy is working and cannot play with her. Ergo, Wednesday’s are rough. I thought our Panda’s Kitchen segment would be the best segment to reserve for Wednesday’s.
D and I love to cook but it took us awhile to get to where we are now, when we first moved in together after college, takeout was a major part of our diet, once we started saving for out first house we realized how much our lifestyle of eating out was costing us and we started buying groceries and cooking. At first we made a lot of burgers, tacos, and frozen pizza, I quickly found myself very bored with our food, which I hated! So I did what any girl would do. I went to Pinterest. Soon after I had more recipes pinned than I would ever use in my lifetime! Let’s grab a fork and dive in.
Skinny Chicken Parmesan
4 boneless skinless chicken breasts fat trimmed
3/4 cup Italian seasoned breadcrumbs
1/4 cup grated parmesan cheese
2 tbsp butter, melted
desired amount of pizza sauce or marinara sauce
desired amount of shredded mozzarella cheese
Preheat your oven to 450. Lightly spray a baking pan with cooking spray.
In a medium bowl mix breadcrumbs and parmesan cheese. Then lightly brush the chicken with the butter. Once coated, dip the chicken into the breadcrumb cheese mixture and press the mixture onto the chicken, place chicken into the baking sheet. Spray the top of the chicken with the cooking spray before placing the chicken in the oven. Bake for 20 minutes.
Put your sauce on the chicken
Sprinkle on your cheese, try not to get as much on pan as D did, it was not fun clean up
Pop this back into the oven for 5 minutes or until your cheese is nice and melty.
