Today we are doing a healthy fried chicken! D loves KFC! As for me, I think they have changed over the years, the breading is not as good, it is greasier and overall quality has gone down.
One day,a couple years ago (yes years, I looked at these pictures and noticed they were taken at our first apartment) D wanted KFC and I did not want to put myself through eating it. So what did I do? I went to Pinterest of course! I spent about twenty minutes looking at “Copycat KFC” recipes until I found one that I could make work with what was already in my pantry, and one that would not give us heart attacks from the amount of butter. Well, I failed at finding a recipe without butter but, after doing a bit of research I learned that a liberal coat of Pam could help.
Let’s dive in!
Oven Fried Chicken
4 chicken breasts thawed and fat trimmed
1 gallon sized bag
1 cup flour
1 tbsp Lawry’s seasoning salt
2 tsp paprika
1/2 tsp salt
1/2 tsp pepper
Preheat oven to 400. Combine flour, seasoning salt, paprika, salt and pepper into your gallon sized bag and shake to combine
Spray baking pan liberally with your cooking spray. Once your chicken has the fat trimmed put all 4 pieces in the bag and shake to coat the chicken. Place on the greased pan and bake for 10 minutes After 10 minutes flip the chicken and bake another 10 minutes. Serve and enjoy!
